FFwD - Vietnamese Chicken Noodle Soup
This week’s FFwD recipe is Vietnamese Chicken Noodle Soup. Goodness, this was a hard recipe to photograph nicely! The soup almost has Thai flavours without the curry paste. It’s a coconut milk based recipe with fish sauce to season, chicken gently poached in the soup and noodles. There were also a myriad of things you cold flavour the soup with - I was a bit boring and just used lime juice.
The soup was nice – probably nicer the next day once all the flavours had had a good chance to meld together. I think if I made it again I would make the curry paste version just to give it a bit more depth of flavour. Check out the other FFwDers’ versions here.

I put mine in a white bowl too and thought hmmm...this isn't very attractive! I liked it though. I thought the lime juice gave it a nice flavor.
I think your photo looks very attractive. I can vouch for the curry version - delicious!
I agree, the soup wasn't very photogenic, but it had a nice flavor and was even better the next day.

Definitely difficult to photograph. I just noticed that you are Kiwi - I studied at Otago in Dunedin for a semester about 5 years ago and loved it! NZ has the best cheese/milk I've ever had!
Looks great! I added curry paste to mine and I think it definitely added something.
Soup is just NOT photogenic, but it's the taste that counts. I will make this as soon as I find all the spices.
I think ur pic is delicious, adn lime aint boring, i should have added that too, what i wanna do next is the same recipe with lemon grass, shrimps and calamari!!
that sounds delicious...I'm rather obsessed with Vietnamese food, or just asian food in general really. Your blog is keeping up to its wonderful state.
Made both versions and the curry was better. Was good. Was hard to photograph.
And what about adding some more pictures? I’m not trying to offend anyone, blog is really nice. But as I know visitors acquire information much more efficient when there are some useful images.

Soup is often a challenge to photograph isn't it? Sometimes something green can help, perhaps some herbs? Having said that, if someone offered me a blowl, it'd be finished in no time ;P
