Rachel Allen, Bake


One of the things that we have in the new house that we didn’t have before is Food TV. I cant believe that as a dedicated cook and baker I have existed this long without it :0) Actually, to be honest, I am not a huge TV person and I do have limited time to watch it, but I have been enjoying Rachel Allen, Bake. I love her soft lilting Irish accent. And, being a sucker for cook books, I recently bought her book that goes with the TV series.

Last night was both the first time that I have baked cookies in my new oven and the first time to make something from Rachel’s book. My husband said that he fancied chocolate chip cookies, so I made Rachel’s basic biscuit recipe, varying it to make the cookies dark chocolate with white chocolate chunks. The recipe was so simple – butter, sugar and flour and the cookies turned out just as I like them – quite shortbready. I used dutched cocoa which gave a wonderful depth of flavour and chunks of milky bar. I loved the easiness of these cookies and can see them becoming a favourite as I experiment with different variations.

Double Chocolate Cookies (adapted from Rachel Allen, Bake)

110g sugar
225g butter
225g flour
50g dutched cocoa
180g white chocolate cut into chunks

• Cream butter and sugar
• Stir in flour and cocoa and lastly chocolate chunks
• Roll into balls, place on trays and flatten slightly with a fork
• Bake at 170c for about 15 minutes

Yay for the new oven!! These cookies look fantastic. I'm craving them right now. I love a nice sandy, shortbread-y chocolate cookie. Fabulous!

Hooray - what a great batch of cookies for your new oven. I have never seen Rachel Allen's show (unfortunately I don't have FoodTV :( ), but I am resisting the urge to buy the book - I have more cookbooks that I have room to house them in my new/old flat.

I want to make these for my coffee group. When you say flour in the recipe do you mean self-raising? If I wanted to use normal flour how much baking powder would I add? Thanks Tammy.

Hi Sally

Interestingly these cookies dont have any raising agent in them - the flour is all purpose and there is no baking powder (same as shortbread). it's a great recipe

Really? I've never made shortbread so I wouldn't know. Definitely going to try them out this week. I'll let you know what the girls think.

YAY for these biscuits. I need to bake for a friend and saw these on your blog and was inspired once again by your cooking and writing. im not so sure that there'll be that many left for my frined though as the dough is just delicious and I sampled quite a bit before making them- drat!

Thanks for the inspiration, these will definitely get copied into the recipe book!!

Hi Tammy. I made the cookies. They were so easy. I didn't like them at first because they are so crumbly and I prefer a chewy cookie. They reminded me of afgans actually and I missed the crunchy cornflakes. But I had one today and now I am addicted to them. They must improve with age. The girls liked them but didn't eat enough and I'm using all my willpower not to eat the rest. Will definitely make them again. Thank you!! Oh, and I want to see some pics of your kitchen when it is complete. I should also mention that my husband loves your blog and checks it everyday to see what you've made. His favourite to date was the Windsor Fudge Cheesecake. I think I am going to have to make it for him at some stage.

I am so glad you liked them! I prefer drier biscuits which is why i think I really liked them. I love a good afghan biscuit though! I am assuming you are based in NZ with liking afghans. that is so nice that your husband reads my blog. :0) Fingers crossed kitchen will be finished by the end of the week - the cabinet maker has let us down quite a bit. he is 4 weeks late with the door fronts!! but we will get there in the end :0)

I'm irish and her accent is nothing like irish. it's just some bad posh american/irish accent. she is not really popular here but her recipes are fairly good and the reason for that is because they are designed by her mother in law and famous cook Darina Allen.

I have made the cookies today, my brother ate 3 of them straight out of the oven, even though they were boiling! He says he wishes I wanted to be a baker instead of an author when I am older, I'm giving it some thought.
